Baked Vanilla Custard

Using skim milk in this custard recipe significantly decreases both fat and calories yet you still got a good source of protein and calcium.

Vanilla Custard

Ingredients

3 eggs, slightly beaten
1/4 cup sugar
1/4 teaspoon salt
1/2 to 1 teaspoon vanilla extract
2 cups skim milk, scalded
Ground nutmeg, optional

Directions

Beat well the first 4 ingredients.

Add milk gradually, stirring constantly. Pour into 6 (6 ounce) custard cups. Place cups in a 13 x 9 x 2 inch baking pan and pour hot water in the pan until it reaches 1 inch.

Bake at 325 degrees for approximately 45 minutes or until a knife inserted between the center and the edge comes out clean. Remove cups from pan and chill.

Yield: 6 servings
