Bean and Cheese Burrito

This is a very healthy and delicious recipe for burritos that also qualify as vegetarian.

Burrito

Ingredients

1 fat free soft taco size flour tortilla
1/2 cup fat free refried beans
1/3 cup thinly sliced or shredded Romaine lettuce
3 tablespoons sharp Cheddar cheese, shredded
3 tablespoons plum tomato, chopped
3 tablespoons salsa

Directions

Microwave refried beans until warm; spread over tortilla.

Top with lettuce, cheese, tomato and salsa; roll up.

Qualifies as a vegetarian recipe.
