Tacos made health and very Mexican pot roast, tomatoes, spinach, Cheddar cheese and avocado salsa.

Taco Shell

Ingredients

Fill a 1 (6-inch) taco shell with:

3 ounces cooked shredded chuck shoulder pot roast
2 tablespoons chopped tomatoes
1/4 cup shredded spinach leaves
2 tablespoons shredded lowfat Cheddar cheese
2 tablespoons avocado salsa

Directions

Enjoy with 1/2 cup fat-free refried beans on the side.
