Potato Cakes

Cook and mash tender new potatoes. Mix with an egg, some milk and flour and cook in vegetable oil. Very tasty served with applesauce.

New Potatoes

Ingredients

2 cups new potatoes, cooked, peeled and mashed
1 egg
1 tablespoon flour
2 tablespoons milk
1/4 cup vegetable oil

Directions

Mix mashed potatoes, egg, flour, and milk thoroughly.

Shape into flat cakes, about 1/2-inch thick.

Heat oil in skillet.

Add potato cakes to hot skillet. Cook until golden brown and thoroughly heated.
