Baked Catfish Dijon

Catfish

Heat oven to 450-degrees. Sprinkle four catfish fillets (six to eight ounces each) with salt and pepper to taste.

Mix together 2 tablespoons softened butter or margarine, 2 tablespoons Dijon mustard, 1 tablespoon fresh lemon juice, 2 teaspoons Worcestershire sauce and 1 minced garlic clove; spread over fish. Sprinkle with 1/2-cup fine dry bread crumbs. Bake 10 to 12 minutes or until fish is opaque throughout.

Serving suggestions: parsley potatoes, frozen baby corn blend, heat-and-eat dinner rolls.
