Baked Ham Heroes

Stop by the deli to grab the main ingredients for these fantastic ham heroes and add a side of deli coleslaw to finish it off as a meal.
Ingredients
1 pound loaf Italian bread
8 ounces deli ham
Red Pepper strips
3/4 cup sliced red onions
Chopped spinach or shredded lettuce
1-1/2-cup Deli Coleslaw
4 ounces shredded cheese
Directions
Heat oven to 375-degrees.
Split a long, one-pound loaf of Italian bread horizontally. Put top, cut side down, on baking sheet.
Arrange the thinly sliced deli ham on bottom of loaf. Top with store-bought sweet red pepper strips, thinly sliced red onions, shredded or chopped spinach (or shredded lettuce) and four ounces of any shredded reduced-fat cheese.
Bake 8 minutes or until cheese melts.
Cover with bread top; cut crosswise into six portions and serve with cole slaw.
Yield: 6 servings.
Bonus: Satisfying Ham Sandwiches
Mix ground leftover baked ham (or purchase some lean deli ham) with chopped olives, green pepper, shredded cheddar cheese, Dijon mustard and mayonnaise. Stuff into hard rolls, wrap in foil and bake at 375 degrees for 30 minutes.
Notable Note:
Ham is a good source of Vitamin C and Thiamin, Protein, Niacin, Vitamin B12, Phosphorus and Selenium. Ham is also high in Sodium and Cholesterol, so if you're interested in maintaining optimum health, try eating it in moderation and look for reduced sodium, lean ham - it's actually better than the "fully fatty" hams!
