You won't find a lemon pie recipe faster or easier than this one and its low in fat and calories, too.
Ingredients
1 reduced fat graham cracker crust
1 can lemon pie filling
1 container (8 oz) Cool Whip Whipped Topping
Directions
Start with a reduced-fat graham cracker crust; the store-bought ones work well or you can make your own.
Open up a can of lemon pie filling and pour it into the graham cracker crust.
Heap with fat free (or light) whipped cream; thawed Cool Whip works terrific.
Put in refrigerator for about two hours, and it's dessert.
Yield: 6 to 8 servings
Notable Note
There are two different types of lemons -- acid and sweet. The most common acid varieties include Eurekas and Lisbons. The acidic type is grown commercially and the sweet types are grown mainly by home gardeners. The trees bloom continuously all year and can produce up to 500 or 600 lemons a year.
