Perfectly Simple French Fries

Home made French fries don't have to be messy or high in calories, and they don't need to be fried twice in a gallon of oil, as most recipes suggest.

Ingredients

2 pounds raw potatoes cut into strips
2-1/2 cups peanut oil

Directions

For perfectly simple home-cooked fries, pour 2-1/2 cups of peanut oil into a large skillet, but -- this is important -- do not turn on the heat yet.

Stir in two pounds of raw potatoes cut into strips. Now turn the heat to medium-high and cook until golden brown, about 30 minutes.

Nutrition nibble: These slow-cooked fries absorb only about 1-tablespoon of fat per serving -- much less than most people slather on a baked potato via butter or sour cream.

Yield: 4 to 6 servings

Bonus: Potato Bites

It's not often that a recipe this simple makes you look like a gourmet cook, but this one does!

Ingredients

1 pound round red new potatoes
1/2 cup low-fat sour cream
Suggested garnishes: Capers, roasted red pepper strips, fresh dill sprigs or caviar

Directions

Rinse potatoes. Take a small slice off each end of each potato; cut potatoes in half. In 2-quart saucepan, boil potatoes until fork tender, about 10 minutes.

Remove potato halves and arrange, end side down, on a platter. Top each potato half with a small dollop of sour cream, and add your favorite garnish. Recipe yields about 14 Bites.

Notable Note Notable Note

Potato chips were invented at Saratoga Springs, New York in 1853 when Commodore Vanderbilt complained to his steward that he made his French fries too thick, the steward who was a little put out, sliced some potatoes as thin as he could, placed them in boiling grease and served them. Needless to say the Commodore was delighted.
