Mango Tango Salsa
Salsa is low in calories and rich in lycopene, vitamin C and other antioxidants. Do it yourself with this recipe -- it takes just minutes and will put those juicy tomatoes of yours to good use! In addition, it's a low-sodium alternative to store bought.
Dice three tomatoes and two mangoes.
Add one-half medium red onion, finely chopped, the juice of one lime and three tablespoons chopped cilantro. Salt (lightly) and pepper to taste.
Top with 2 tablespoons chopped onions and 1 tablespoon mustard.
This recipe makes 4 servings.
