Microwave Baked Apples

Baked apples are always a wonderful fall treat but apples take a while to bake so when time is short, use this microwave version instead.

Apple

Ingredients

2 medium (about 6 to 8 oz. each) apples
4 tablespoons favorite fruit preserves
2 tablespoons apple juice

Directions

Pare top third of apple; core.

Arrange apples in microwave-safe baking dish; fill centers with preserves.

Pour juice in bottom of dish; cover with vented plastic wrap or lid. Microcook at HIGH (100%) 4 to 5 minutes or until apples are tender.

This recipe makes 4 servings.

Notable Note Notable Nutrition Note

Nutritionally there is no difference between "natural" and "regular" apple juice, even the fiber content is the same.
