Middle-Eastern Spice Rub

Spice Rub

Combine the following ingredients together for a spice "rub" with Middle-Eastern flair that can be added to beef, pork, lamb or chicken (makes 2 tablespoons):

  • 2 teaspoons ground, black pepper
  • 1-1/2 teaspoons ground cumin
  • 1 teaspoon (each) ground coriander and salt
  • 1/2 teaspoon ground cardamom
  • 1/4 teaspoon ground cloves

To use, simply cover your trimmed meat with the mix and then grill, broil or roast.

Notable Note Spice rub makes a great gift to any barbecue-enthusiast on your gift list. Simply mix up a batch of signature spices in a sterilized glass jar and seal tightly. Having a jar on hand can allow you to add extra flavor at a moment’s notice and is excellent for frequent entertainers.
