Orange Pancakes
Ingredients:
2 cups reduced-fat biscuit mix (such as Bisquick)
1 cup orange juice
2 eggs or egg substitute equal to 2 eggs
In a medium bowl, stir together biscuit mix, orange juice and eggs.
For each pancake, pour about 3 tablespoons of batter onto a hot, lightly greased griddle or heavy skillet. Cook over medium heat about 2 minutes on each side or until golden.
Keep warm while remaining pancakes cook.
Slimming Suggestion: Top waffles or pancakes with fresh fruit and a dollop of yogurt instead of maple syrup.
