Oven Baked Fajitas

Oven Baked Fajitas are made healthy first by baking and next with healthful tomatoes and peppers and lean beef.

Fajita

Ingredients

2 tablespoons vegetable oil
2 teaspoons chili powder
2 teaspoons ground cumin
1 teaspoon salt
1 can (14-1/2 oz) diced tomatoes with mild green chiles
1 green bell pepper
1 red bell pepper
1 sliced onion
2 cups cooked beef, cut into strips
Tortillas, warmed

Directions

Heat oven to 400-degrees.

In a 13 x 9-inch baking dish, combine vegetable oil, chili powder, ground cumin and salt; mix well.

Add diced tomatoes with mild green chiles, green bell pepper, red bell pepper cut into strips and one sliced onion. Mix well.

Bake uncovered 15 minutes. Stir in 2-cups cooked (leftover or deli) beef; cut into strips. Bake ten more minutes. Serve beef mixture wrapped in warm fat free flour tortillas.

Serving Suggestions: Add rice on the side and a chopped lettuce salad.
