Make your own cream cheese using tofu. This recipe makes it a snap and you can serve it on bread or baked potatoes instead of butter.

Ingredients

Combine in blender:

  • 12-ounces tofu
  • 1/2 teaspoon salt
  • 1/4 teaspoon dill
  • 1/4 teaspoon caraway seeds
  • 2 tablespoons water
  • juice of 3 small limes

Directions

Blend in blender until thoroughly mixed and of creamy, spreadable texture.

Serve on bread or baked potatoes.

Tofu added to dishes with other flavors (i.e., spices, seasonings, herbs) can add a great nutritional boost without taking away flavor. If you've ever eaten in a Chinese restaurant, chances are the cubes in your stir-fry were not chicken as many assume, but tofu.
